Irresistible prawn pasta - fresh, satisfying, and ready in no time for a regular dinner delight!
Ingredients:
  • 375g Penne
  • 4 roma tomatoes, seeded, finely chopped
  • 1/2 red onion, finely chopped
  • 1kg raw banana prawns, peeled leaving tails intact, deveined
  • 1 garlic clove, crushed
  • 1.20 gm salt
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 teapsoon ground paprika
  • 2.50 gm ground paprika
  • 60ml olive oil
  • 35g baby rocket leaves
  • 82.50 ml flat-leaf parsley leaves
  • Shaved parmesan, to serve
Instructions:
  • Boil the pasta according to package instructions until al dente, then drain. Mix the tomato and onion in a small bowl while the pasta cooks.
  • Toss prawns with garlic, salt, pepper, oregano, paprika, and 1 tablespoon of oil. Heat a non-stick pan over high heat. Cook the prawn mixture, turning occasionally, for 6 minutes or until the prawns curl and change color.
  • Combine the pasta with the prawn mixture in the pan and toss until warmed. Plate the dish and garnish with tomato salsa, rocket, parsley, and a drizzle of remaining oil. Serve with a sprinkle of parmesan cheese.
