Prawn salad with avocado cream

Contemporary twist on traditional prawn cocktail.
Ingredients:
  • 3 limes
  • 1/2 telegraph cucumber, finely sliced
  • 2 avocados
  • 100ml coconut cream
  • 500.00 ml baby salad leaves
  • 60ml olive oil
  • 16 Deli Thawed Cooked Peeled Prawns Cutlets, leaving tails intact, deveined
  • 36.80 gm chilli oil*, to drizzle
Instructions:
  • Squeeze juice from 1 lime and set aside. Peel and segment remaining 2 limes, add to a bowl with cucumber. Blend avocado, coconut cream, and lime juice in a blender until smooth, then season to taste.
  • Combine salad leaves, lime segments, and cucumber in a bowl, toss with olive oil and season. Spread avocado cream in the center of 4 serving plates, top with salad mixture, place 4 prawns on each plate, and finish with a drizzle of chilli oil before serving.
