Aussie prawn and mango salad with creamy sweet chilli dressing - the perfect Christmas showstopper!
Ingredients:
  • 1/4 watermelon
  • 1/2 rockmelon
  • 1/2 iceberg lettuce, shredded
  • 2 avocados, diced
  • 1 continental cucumber, sliced into rounds
  • 2 mangoes, diced
  • 1kg cooked King prawns, peeled, deveined (tails intact)
  • 80g baby rocket
  • 1 green onion, thinly sliced
  • 40.00 ml fresh mint leaves, torn
  • 123.75 gm whole-egg mayonnaise
  • 2 tsp finely grated lemon rind
  • 21.00 gm lemon juice
  • 22.00 gm sweet chilli sauce
  • 1 garlic clove, crushed
Instructions:
  • Prepare Dressing: In a small jug, combine mayonnaise, lemon zest, lemon juice, sweet chili sauce, and garlic. Season generously with salt and pepper, then whisk until well combined.
  • Cut a 2cm star shape from watermelon. Use a melon baller to scoop small balls from the rest of the watermelon and rockmelon. Place them on a paper towel-lined tray to soak up any extra moisture.
  • In a 4-litre-capacity glass serving bowl, arrange watermelon at the base. Layer with lettuce, rockmelon, and cucumber. Drizzle half of the dressing over the salad. Add mango, prawns, and avocado on top.
  • Combine rocket, onion, and mint leaves in a bowl. Pile on top of salad. Skewer the salad with a bamboo stick, place a watermelon star on top. Finish with the remaining dressing drizzled on top. Serve promptly.
