Savor the bold and vibrant flavors of traditional South Indian prawn thokku. Juicy prawns cooked in a flavorful blend of spices, coconut, and tomatoes for a delicious seafood curry.
Ingredients:
  • 18.40 gm vegetable oil
  • 2 fresh curry leaves
  • 2 large red onions, finely chopped
  • 8cm piece fresh ginger, finely grated
  • 3 garlic cloves, crushed
  • 2 long green chillies, sliced, plus extra to serve
  • 10.00 gm ground cumin
  • 20.00 ml ground coriander
  • 2 tsp ground turmeric
  • 2 tsp garam masala
  • 500g tomatoes, finely chopped
  • 2 Vegetable Stock Cubes
  • 44.40 gm tomato paste
  • 60ml (¼ cup) coconut milk
  • 500g large raw peeled prawns, tails intact
  • 20.00 ml tamarind puree
  • Naan, warmed, to serve
Instructions:
  • In a large deep frying pan over medium heat, warm the oil. Add the curry sprig and curry leaves, and cook for 1 minute until the leaves are crispy. Remove 1 sprig to a paper towel-lined plate, leaving the curry leaves in the pan.
  • Sauté onion, ginger, garlic, chili, and spices in a pan until onion softens. Stir in tomato, stock cubes, tomato paste, and 1/2 cup of water, and cook until the mixture thickens.
  • Combine creamy coconut milk, succulent prawns, and tangy tamarind. Cook while stirring occasionally for 4-5 minutes until prawns are cooked through.
  • Garnish curry with reserved curry sprig and additional chili. Enjoy with naan.
