Ingredients:
  • 1.5 kg tiger prawns, cooked
  • 40.00 ml chopped preserved lemon peel
  • 1 green onion, sliced
  • 150g mayonnaise
  • Cracked black pepper, to taste
  • 80ml soy sauce
  • 42.90 gm honey
  • 1/2 tsp sesame oil
  • 1 tsp grated ginger
  • 2 tsp sherry
  • toasted sesame seeds, to serve
  • 250.00 ml coriander leaves, chopped
  • 1 green onion, thinly sliced
  • 44.00 gm sweet chilli sauce
  • 18.30 gm fish sauce
  • 21.00 gm lime juice
Instructions:
  • Rinse the preserved lemon under cold, running water, gently squeeze to remove excess water, and pat dry with a paper towel. Use a spoon to separate the skin from the flesh, discard the flesh, and finely chop the skin. Combine the lemon peel, green onion, mayonnaise, and pepper in a bowl, stirring until well mixed. Chill in the refrigerator until ready to use.
  • Combine soy sauce, honey, sesame oil, ginger, and sherry in a bowl. Chill until ready to use, then garnish with sesame seeds before serving.
  • Combine coriander, green onion, sweet chili sauce, fish sauce, and lime juice in a bowl. Mix thoroughly and refrigerate until ready to use.
  • Arrange the grilled tiger prawns on a serving platter alongside the trio of dipping sauces for a fun and interactive dining experience.
