Prawn-stuffed flatfish

Delicious flatfish recipe featuring fresh herbs and zesty lemon.
Ingredients:
  • 1.2 - 1.5 kg flatfish, such as flounder, lemon or Dover sole, plaice turbot or brill or 4x200g, from sustainable sources, ask your fishmonger
  • 2 medium onions peeled and finely sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic peeled and finely grated
  • cayenne pepper
  • 1 lemon
  • 250 g raw prawns from sustainable sources, ask your fishmonger, peeled
  • 1 splash white wine
  • ½ a bunch fresh flat-leaf parsley (15g)
Instructions:
  • Ask your fishmonger to make a pocket or do it yourself. Cut along the secret line from the head to the tail, separate the fillet from the bone, about 4-5cm deep on both sides. Lay the fish on sliced onions in a roasting tray. Season, stuff with prawns tossed in garlic, cayenne, lemon zest, olive oil. Drizzle olive oil, white wine, and lemon over the fish. Roast for 25 minutes for large fish, 12 minutes for small. Sprinkle with parsley, squeeze roasted lemon juice, and serve with the flavorful juices from the tray. Enjoy with your favorite sides.
