Easy homemade pizza crust that can be made in two ways: overnight in the fridge or traditional sponge-rise method. Practice makes perfect!
Ingredients:
  • 1.5 teaspoons active dry yeast
  • 1.5 cups water
  • 3 cups all-purpose flour
  • 1 teaspoon sea salt
Instructions:
  • For the overnight cold rise method, start by dissolving yeast in water in a large bowl. Add 2 cups of flour and salt, ensuring everything is well mixed. Gradually stir in the rest of the flour, 1/2 cup at a time, thoroughly beating after each addition. Once the dough comes together, transfer it to a lightly floured surface and knead for about 15 minutes until it is smooth and supple. Place the dough in a floured bowl, cover it with plastic wrap, and refrigerate it overnight.
  • For the sponge rise step: In a large bowl, combine yeast with 1/2 cup water until dissolved. Mix in 1/2 cup flour until well combined. Cover the bowl with plastic wrap and allow it to rise until foamy, approximately 1 hour. Then add the rest of the water, flour, and salt, and mix thoroughly. Once the dough comes together, transfer it to a floured surface and knead for about 15 minutes until smooth. Place the dough in a floured bowl, cover with plastic wrap, and let it double in size for 2 to 3 hours.
  • Gently press down the dough and transfer it to a floured surface. Divide it into two equal portions. Roll out each piece to half its intended size and allow it to rest for 10-15 minutes while you gather your favorite pizza toppings. Preheat the oven to 450°F (230°C).
  • Gently shape the dough over your floured knuckles and give it a few spins until it reaches the size you want. Transfer the dough to a baker's peel dusted with cornmeal or a lightly greased pizza pan. Add your favorite toppings and bake on a preheated pizza stone in the oven for 8 to 10 minutes, or until golden brown. Allow the pizza to cool for 5 minutes before serving.
