Quick sausage meatballs with a tomato & basil sauce, spaghetti & sweet raw peas

Enhance meatballs with premium sausage and fresh peas just before serving.
Ingredients:
  • olive oil
  • 8 good-quality pork sausages
  • 500 g spaghetti
  • 300 g fresh peas in their pods
  • 1 block Parmesan cheese to serve
  • a few sprigs fresh marjoram, thyme or rosemary leaves picked
  • 2 cloves garlic peeled and finely sliced
  • ½ a bunch of fresh basil (30g), leaves picked, stalks finely chopped
  • 2 x 400 g good-quality tinned plum tomatoes
  • good-quality balsamic vinegar
Instructions:
  • Preheat a large saucepan over medium heat and drizzle in a generous amount of olive oil. Remove sausage from casings and shape into small meatballs. Cook until golden brown and fully cooked. In another pot, cook spaghetti according to package instructions. For the tomato sauce, sauté garlic and basil stalks in olive oil, then add tomatoes and season; simmer and stir in balsamic vinegar. Combine meatballs with herbs, then assemble by serving meatballs and spaghetti topped with tomato sauce, fresh basil, peas, and Parmesan. Enjoy!
