Transform pork sausages into delicious meatballs for a quick and flavorful meal.
Ingredients:
  • 600g Italian pork sausages
  • 75g pancetta, chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 400g risoni or orzo pasta
  • 400g can chopped tomatoes
  • 250ml red wine
  • Finely chopped flat-leaf parsley leaves, to serve
  • Grated parmesan, to serve
Instructions:
  • Remove the sausage meat from the skins, then shape it into 20 walnut-sized balls.
  • Heat oil in a deep frypan over medium heat. Cook the meatballs until golden, turning occasionally, about 3-4 minutes. Set aside. Add pancetta to the pan and cook until slightly crisp, about 2-3 minutes. Add onion and garlic, cook until slightly softened, about 2-3 minutes. Stir in risoni to coat, then add chopped tomatoes, tomato paste, wine, and 2 cups (500ml) hot water. Season, bring to a simmer, then return meatballs to the pan. Reduce heat, simmer for 10 minutes until risoni is cooked and liquid absorbed. Enjoy!
  • Serve by dividing the mixture into bowls and garnishing each with chopped parsley and parmesan.
