Chorizo meatballs with risoni recipe

Delicious chorizo meatballs with risoni for a cozy weeknight meal.
Ingredients:
  • 2 chorizo sausages, sliced
  • 500g Pork Mince
  • 3 shallots, finely chopped
  • 40.00 ml oregano leaves
  • 2 x 400g cans diced tomatoes
  • 3 garlic cloves, crushed
  • 500ml vegetable stock
  • 110g risoni
  • 2 zucchini, thickly sliced crossways
  • 100g baby spinach leaves
  • Finely grated parmesan, to serve
Instructions:
  • Prepare a large baking tray with baking paper. Using a food processor, finely chop the chorizo. Add the mince, shallot, and oregano to the processor and combine well. Shape the mixture into 1-tbs sized balls and arrange them on the prepared tray.
  • In a large non-stick heavy-based saucepan, combine tomato, garlic, and stock. Bring to a boil over high heat. Stir in the risoni, then reduce heat to low. Cook, stirring frequently, for 10-15 minutes until risoni is just tender.
  • Combine the zucchini and meatballs with the tomato mixture in the pan. Simmer while stirring gently for 5-10 minutes until the zucchini is tender and meatballs are cooked through. Fold in the spinach and season to taste.
  • Distribute the meatball mixture evenly into individual serving bowls and garnish with grated parmesan before serving.
