Chorizo meatballs

Delight hungry teens with delicious tapas!
Ingredients:
  • 36.40 gm olive oil
  • 1 large brown onion, finely chopped
  • 5.00 gm smoked paprika
  • 5.00 gm mild paprika
  • 240g chorizo
  • 700g lean beef mince
  • 125.00 ml fresh breadcrumbs
  • 800g tomato
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • Crusty bread, to serve
Instructions:
  • In a frying pan over medium-high heat, heat half of the oil. Sauté the onion for 5 minutes until softened. Add garlic and paprika, cook for 1 more minute until fragrant. Let it cool.
  • Mix the onion mixture, chorizo, minced meat, and breadcrumbs together in a bowl. Roll heaping tablespoons of the mixture into balls and place them on a plate.
  • Heat the rest of the oil in a pan over medium-low heat and brown the meatballs in batches for 4 to 5 minutes. Transfer to a plate.
  • Turn up the heat to medium, then pour in tomato and 1/2 cup of cold water, bringing it to a boil. Lower the heat to low and let it simmer, stirring every so often, for 10 minutes until it thickens slightly. Add the meatballs back to the pan, cover it, and simmer for 5 minutes. Uncover and let it simmer for an additional 10 minutes, ensuring the meatballs are fully cooked and the sauce has thickened. Garnish with parsley and serve with bread.
