Smoky chorizo BBQ meatballs, ready in minutes, ideal for main course or appetizer.
Ingredients:
  • cooking spray
  • 1 pound ground beef
  • 0.5 pound ground chorizo
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup Italian bread crumbs
  • 1 large egg
  • 1 large clove garlic, minced
  • 1 (18 ounce) bottle barbeque sauce (such as Sweet Baby Ray's® Sweet 'n Spicy)
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously coat a large glass baking dish with cooking spray.
  • Combine ground beef, chorizo, Parmesan cheese, bread crumbs, egg, and garlic until thoroughly mixed.
  • Shape mixture into around 36 meatballs and arrange them neatly in rows in the baking dish. Generously drizzle barbecue sauce over each meatball until a small puddle forms underneath.
  • Bake uncovered in the preheated oven for 18-22 minutes until the centers reach at least 160°F (71°C on an instant-read thermometer.
