Whip up a quick, wallet-friendly dinner with just 6 ingredients!
Ingredients:
  • 750g pork sausage
  • 27.30 gm olive oil
  • 200g button mushrooms, thinly sliced
  • 575g jar napoletana pasta sauce
  • 50g baby spinach
  • 375.00 ml couscous
  • 375.00 gm boiling water
Instructions:
  • Remove the meat from sausage casings and gently shape tablespoons of meat into balls with moist hands before placing them on a plate.
  • In a large frying pan over medium-high heat, heat 1 tablespoon of oil. Cook half of the meatballs, turning occasionally, for 3 to 4 minutes until they are golden. Transfer them to a plate lined with paper towel. Cook the remaining meatballs in the same way. Next, add the mushrooms to the pan and cook for 5 minutes until they are softened.
  • Pour in the pasta sauce and let it come to a gentle boil. Place the meatballs back in the pan and lower the heat to a simmer. Let them cook for 5 minutes or until fully cooked. Add in the spinach and cook for an additional 1 to 2 minutes, stirring occasionally, until the spinach wilts.
  • In a large heatproof bowl, mix couscous, boiling water, and the rest of the oil. Cover and let stand for 5 minutes until the liquid is absorbed. Fluff the grains with a fork to separate.
  • Plate the fluffy couscous evenly among individual plates and generously ladle the flavorful meatball mixture on top. Serve immediately and enjoy!
