Enhance rice, pasta, salads, chicken, and fish with zesty preserved lemon slivers.
Ingredients:
  • 4 large lemons, cut into 8 wedges each
  • 0.75 cup kosher salt
  • 1 cup lemon juice
  • 0.75 cup olive oil
Instructions:
  • Coat lemon slices with kosher salt and arrange them in a clean 2-quart glass jar. Add lemon juice, seal tightly, and leave on the counter for 1 week, turning the jar daily. After a week, fill the jar with olive oil to submerge the lemons. Refrigerate for up to 4 months.
  • Peel the lemon, removing the pulp and white pith to keep only the yellow rind. Cut into thin strips (julienne) and sprinkle over your dish for a burst of lemon flavor.
