Tender beef chili Colorado cooked quickly in a pressure cooker.
Ingredients:
  • 2.5 pounds beef chuck, cut into 1-inch cubes
  • salt and ground black pepper to taste
  • 1 onion, diced
  • 3 cloves garlic, chopped
  • 2 tablespoons ancho chile powder
  • 2 teaspoons Spanish paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon chipotle chile powder
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon dried oregano
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1.25 cups water
  • 0.125 cup ground corn chips
  • 0.125 cup chopped fresh cilantro
  • 0.125 cup chopped green onions
Instructions:
  • In a sizzling skillet, heat up 1 tablespoon of vegetable oil over medium-high heat. Season beef liberally with salt and black pepper, then sear the meat in the skillet until it's beautifully browned on all sides, which should take about 5 to 10 minutes. Remove the beef from the skillet and place it on a plate, setting it aside for later.
  • In a pressure cooker pot, warm 1 tablespoon of vegetable oil over medium-low heat. Sauté onion and garlic until almost translucent, about 4 to 6 minutes. Add ancho chile powder, paprika, cumin, black pepper, chipotle chile powder, cayenne pepper, and oregano. Sauté until fragrant, about 2 minutes. Stir in diced tomatoes, beef, and water, and mix well.
  • Seal the lid of the pressure cooker and bring to high pressure. Simmer on low for 15 minutes. Let it rest for 10 minutes off the heat. Release the pressure completely and uncover.
  • Place the uncovered pressure cooker back on the burner set to high heat. Add corn chips and bring to a boil. Let it cook for 5 minutes. Finish by garnishing with cilantro and green onion.
