Pressure Cooker Butter Beans with Beer and Bacon

Pressure cooker beer-braised butter beans topped with crispy bacon for a hearty side dish.
Ingredients:
  • 1 pound dried large lima beans (butter beans)
  • 4 cups water, or more as needed
  • 1 (12 fluid ounce) can or bottle beer
  • 0.5 jalapeno pepper, seeded and minced
  • 1 clove garlic, minced
Instructions:
  • Place the beans in a large container and cover them with cool water, allowing them to soak for 8 hours to overnight.
  • Cook the bacon in the open pressure cooker over medium-high heat, turning occasionally, until it's evenly browned (about 10 minutes). Once done, drain the bacon on paper towels and set the pressure cooker aside to cool, allowing the bacon grease to also cool (about 10 minutes).
  • Mix 4 cups of water into the delicious cooled bacon grease, then include beer and cumin for an extra layer of flavor.
  • After draining and rinsing the soaked beans, simply add them to the water mixture in the pressure cooker.
  • Securely place the lid on the pressure cooker. Cook beans following the manufacturer's instructions over medium-high heat for approximately 30 minutes; then release the pressure.
  • Fold in spicy jalapeño pepper and pungent garlic into the flavorful beans. Sprinkle crispy bacon over the top.
  • After sealing the pressure cooker, increase heat to medium to reach 15 pounds per square inch pressure. Turn off the heat and let the pressure release naturally until it reaches 0.
