Instant Pot speeds up cooking tomato-based goat curry with Indian spices.
Ingredients:
  • 0.25 cup vegetable oil, divided
  • 2 large onions, thinly sliced
  • 2 large tomatoes, peeled and diced
  • 2 tablespoons garlic paste
  • 1 tablespoon ginger paste
  • 2.5 pounds goat meat, cubed
  • 1 cup water
  • 1 potato, cubed
  • 1 large carrot, sliced
  • 2 teaspoons garam masala
  • 2 teaspoons ground coriander
  • 0.5 teaspoon ground turmeric
  • 2 teaspoons salt, or to taste
  • 0.5 teaspoon ground red chile pepper
Instructions:
  • In an electric pressure cooker on the "Sear" setting, heat 2 tablespoons of oil. Cook and stir onions until golden brown, approximately 10 to 15 minutes.
  • Place the onions in a food processor and pulse until a smooth paste forms; then transfer the paste to a bowl.
  • In a food processor, blend together tomatoes, garlic paste, and ginger paste until smooth.
  • In the pressure cooker on the "Sear" setting, heat the 2 tablespoons of oil. Add the onion paste and cook, stirring constantly, until browned (about 2 minutes). Stir in the tomato mixture followed by adding the goat meat, water, potato, carrot, garam masala, coriander, cumin, turmeric, salt, and red chile pepper.
  • Follow the manufacturer's instructions to seal the pressure cooker. Cook on high pressure for 50 minutes, then use natural-release method to release pressure according to the manufacturer's instructions.
