Spring-inspired pressure cooker dish ready in under 30 minutes - a must try!
Ingredients:
  • 1 large crown (about 8 ounce) broccoli, cut into 1-inch florets
  • 1 large (about 8 ounce) red bell pepper, cut into 1-inch strips
  • 4 large (about 8 ounces) carrots, peeled and cut into 1/4-inch thick slices
  • 1 pound penne pasta
  • 4 cups low sodium vegetable broth (or 4 cups water and 1 teaspoon kosher salt)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh chopped parsley
  • 1/4 cup shredded Parmesan cheese
  • Freshly ground black pepper to taste
Instructions:
  • To perfectly steam the vegetables, simply add a cup of water to the pressure cooker. Place broccoli, bell pepper, and carrots in a steamer basket inside. Lock the lid, choose the Steam setting, and cook for 1 minute on low pressure. It takes about 10 minutes for the pressure to build up. Quick release the pressure after cooking. Carefully lift out the steamer basket. Remove the inner pot, discard the water, and return the pot to the cooker. Enjoy your freshly steamed veggies!
  • Prepare the pasta: Add pasta and broth to the pressure cooker. Seal the lid, select Manual program, set time for 5 minutes at high pressure (pot takes about 10 minutes to pressurize). Allow pressure to naturally release for 5 minutes, then vent remaining steam and open the pot.
  • Combine the steamed vegetables, olive oil, parsley, Parmesan cheese, and black pepper in a pot. Gently mix until the pasta and vegetables are well coated. Serve the hot pasta in bowls.
