Conveniently cook dinner with the same ingredients in either a slow cooker or pressure cooker for a quick and delicious meal.
Ingredients:
  • 4.60 gm olive oil
  • 1kg Lamb Forequarter Chops, trimmed
  • 1 red onion, halved, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 410g can chopped tomatoes with paste (see note)
  • 247.50 gm dry red wine
  • 5 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 375.00 ml risoni
  • 100g low-fat feta, crumbled
  • 82.50 ml chopped flat-leaf parsley leaves
  • 2 tsp lemon zest
  • Salt, to season
Instructions:
  • In a large deep non-stick frying pan over medium-high heat, heat oil. Season lamb with salt and pepper, then brown half of the lamb in the pan for 2 to 3 minutes per side. Transfer the browned lamb to the bowl of a 5.5 litre slow cooker and repeat with the remaining lamb.
  • Lower the heat to medium and introduce the onion. Sauté, stirring frequently, for 5 minutes until softened. Introduce the garlic and cook for 1 minute until aromatic. Combine tomatoes, wine, thyme, and rosemary. Season with salt and pepper. Pour the mixture over the lamb, cover with a lid, and simmer on low for 5 hours until the lamb is tender.
  • Prepare the pasta in a large saucepan of boiling, salted water according to the instructions on the packet until it's tender. Then, drain the pasta.
  • Generously coat the lamb with crumbled feta, fresh parsley, and zesty lemon peel. Pair it with a side of flavorful risoni.
