Slow-cooked lamb chops in savory Dijon mustard, honey, and herbs, simmered to perfection in red wine.
Ingredients:
  • 0.5 sweet onion, roughly chopped
  • 0.5 cup red wine
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon ground thyme
  • 1 tablespoon dried rosemary
  • 2 teaspoons ground basil
  • 1 teaspoon coarse ground black pepper
  • 0.25 cup tapioca starch
  • 1.5 pounds sirloin lamb chops, room temperature
Instructions:
  • Add the onion and red wine into the slow cooker to develop rich and flavorful base for your dish.
  • Combine honey, mustard, lemon juice, garlic, thyme, rosemary, basil, salt, and pepper in a small bowl and whisk until smooth. Add tapioca starch and whisk until mixture thickens, about 5 minutes.
  • Coat lamb chops generously in the honey-mustard mixture, ensuring they are fully covered.
  • Lay the chops neatly over the red wine and onion blend in the slow cooker, then drizzle the rest of the honey-mustard mix over them.
  • Cook covered on Low for 4 1/2 hours.
