Effortlessly prep salsa verde pork and brown rice together using the Pot-in-Pot method for efficient weekly meals.
Ingredients:
  • 2 pounds boneless pork shoulder roast, trimmed of excess fat and cut into 1-inch cubes
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon ground black pepper
  • 1.5 cups brown rice, rinsed well
  • 1 teaspoon olive oil
  • 1.75 cups water
  • 1 tablespoon water
  • 2 tablespoons olive oil
  • 1 (16 ounce) jar salsa verde (such as Herdez®)
  • 0.25 cup chopped cilantro
  • 1 tablespoon lime juice
  • 6 (3-cup) storage containers
Instructions:
  • In a medium bowl, combine pork cubes with oregano, cumin, salt, coriander, and pepper, ensuring all meat is evenly coated.
  • Rinse rice thoroughly under cold running water using a fine mesh strainer until water runs clear. Drain well.
  • Drizzle 1 teaspoon of oil into an oven-safe bowl that fits inside your pressure cooker. Combine rice, salt, and 1 3/4 cups plus 1 tablespoon water in the bowl. Set aside.
  • In the electric pressure cooker set to Saute mode on high heat, heat 2 tablespoons of oil. Brown pork in batches until lightly browned, about 5 to 6 minutes each. Turn off the cooker, then stir in salsa verde until well combined.
  • In the pressure cooker, position a tall trivet for the rice to rest above the pork. Put the bowl of uncooked rice on the trivet, seal the lid, and set the valve to 'Seal.' Choose high pressure as directed by the manufacturer; cook for 24 minutes. Wait for 10 to 15 minutes for the pressure to rise.
  • Allow the pressure to naturally release for 10 to 40 minutes following the manufacturer's guidelines.
  • Unlock and lift off the lid. Using oven mitts, carefully take out the bowl of rice. Allow it to cool for a bit, then mix in fresh cilantro and a squeeze of zesty lime juice.
  • 1. Preheat the pressure cooker to Saute mode on medium heat. Simmer the sauce until desired thickness, about 8 to 10 minutes. Portion rice into 6 storage containers and top with pork and sauce. Chill until serving.
