Primanti-Style Sandwiches

Experience Pittsburgh's iconic Primanti Brothers sandwich: coleslaw, fries, cheese, and capicola (or veggie option) on thick Italian bread for a taste of the Steel City, with endless meat choices.
Ingredients:
0.5 cupmayonnaise
2tablespoons milk
1tablespoonwhite vinegar
0.5 teaspoonwhite sugar
6cups shreddedcabbage
3cups olive oil
4potatoes, sliced 1/4 inch thick
0.25 poundthinly slicedcapicola
4 (1 ounce) slicesmozzarella cheese
4 (1 ounce) slicesprovolone cheese
4 (1 ounce) slicesSwiss cheese
8thick slicesItalian bread
4thin slicesonion
4thin slicestomato
Instructions:
In a large bowl, combine mayonnaise, milk, white vinegar, and white sugar, then add cabbage and mix well. Refrigerate for at least 1 hour before serving.
Preheat oil to 375 degrees F (190 degrees C. Deep-fry potato slices until crispy and golden brown, about 5-6 minutes. Drain on paper towels.
Heat a large skillet over medium heat. Stack the capicola slices in the skillet and top each stack with 1 slice each of mozzarella, provolone, and Swiss cheese. Heat until the cheese begins to melt.
Place 4 slices of Italian bread on individual plates. Layer capicola and melted cheese on each slice, followed by 1 1/2 cups of cabbage mixture, 1 slice of onion, 1 slice of tomato, and 1/4 of the fried potatoes. Complete each sandwich with another bread slice on top, then cut in half before serving.
