Satisfy your craving for Pittsburgh's famous Primanti's sandwiches no matter where you are with this homemade recipe.
Ingredients:
  • 3 cups shredded cabbage
  • 2 tablespoons vegetable oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons white sugar
  • 1 teaspoon adobo seasoning (such as Goya®)
  • 1 teaspoon ground black pepper
  • 4 cups vegetable oil for frying
  • 3 whole russet potatoes
  • 8 thick slices Italian bread
  • 1 pound sliced pastrami (divided)
  • 4 slices provolone cheese
  • 8 slices tomato
Instructions:
  • Prepare the coleslaw by tossing cabbage, oil, vinegar, sugar, adobo seasoning, and pepper in a bowl until well mixed. Chill until ready to serve.
  • Prepare the fries by heating oil to 375 degrees F. Peel and cut potatoes into 1/4-inch-thick fries.
  • Fry potatoes in hot oil until golden and they rise to the top, about 4 to 5 minutes. Drain on paper towels.
  • Preheat the oven to a cozy 225 degrees F (110 degrees C, perfect for crispy sandwiches). Lay out the bread slices on a baking sheet, ready to soak up the warmth.
  • Place the bread in the preheated oven and toast until it reaches a light brown color, which should take about 3 to 5 minutes.
  • Place four slices of bread on a plate. Top the remaining four slices on the baking sheet with pastrami and provolone cheese. Bake until the pastrami is hot and the cheese is melted, approximately 5 minutes.
  • Plate the sandwiches individually and crown them with a generous serving of French fries, refreshing coleslaw, two slices of ripe tomatoes, and the remaining bread slices.
