Whip up a flavorful veggie pasta for a simple Monday dinner.
Ingredients:
  • 36.40 gm olive oil
  • 2 garlic cloves, finely chopped
  • 1 brown onion, finely chopped
  • 2 zucchini, halved crossways, cut into thin strips lengthways
  • 1 bunch asparagus, cut into 5cm pieces
  • 84.15 gm chicken style liquid stock
  • 100g snow peas, trimmed, halved diagonally
  • 2 vine-ripened tomatoes, chopped
  • extra-virgin olive oil, to serve
Instructions:
  • In a large frying pan over medium heat, sauté garlic, onion, and zucchini in olive oil for 3 minutes. Add asparagus and stock, and cook for 2 to 3 minutes until asparagus is tender. Finally, add snow peas and cook for 1 more minute.
  • Combine the vegetable mixture, tomatoes, salt, and pepper with the pasta, ensuring they are well mixed. Finish by drizzling with flavorful extra-virgin olive oil before serving.
