Delicious prime rib bone soup, a cozy way to use leftover roast bones. A beloved comfort dish for all.
Ingredients:
  • 4 beef ribs, trimmed from a cooked prime rib roast
  • 2 cups beef stock
  • 1 potato, peeled and cut into 3/4 inch pieces
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 teaspoon black pepper
  • 0.25 cup chopped fresh chives
Instructions:
  • Prepare all your ingredients.
  • In a large pot, submerge the ribs in water. Boil until tender and meat falls off the bones, approximately 2 hours.
  • Separate the ribs and let them cool. Trim the meat off the ribs, then cut it into bite-sized pieces before refrigerating.
  • Simmer broth until reduced to 1 cup, then chill until fat solidifies on top.
  • Remove and discard the solidified fat on the surface.
  • In a saucepan, combine broth, meat trimmings, beef stock, potato, mushrooms, salt, and pepper. Bring to a boil, then simmer covered on medium-low heat until potatoes are tender, about 20 minutes. Garnish with chives before serving.
