Enhance breakfast muffins with tangy buttermilk for a healthy twist.
Ingredients:
  • 6 (1 ounce) squares semisweet chocolate
  • 0.33333334326744 cup unsalted butter
  • 2 eggs
  • 0.75 cup buttermilk
  • 0.5 cup sour cream
  • 1.5 teaspoons vanilla extract
  • 1.6666667461395 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup semisweet chocolate chips
Instructions:
  • 1. Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously grease 12 muffin cups.
  • Melt semisweet chocolate and butter in a saucepan over low heat for 3 to 5 minutes. Take off heat and let cool for 10 minutes, then gently mix in eggs.
  • Combine the chocolate-butter mixture, buttermilk, sugar, sour cream, and vanilla extract in a bowl and whisk until smooth.
  • Combine flour, baking soda, and salt in a large bowl, creating a well in the center. Gently mix in the chocolate mixture until just combined, then fold in the chocolate chips. Spoon batter into muffin cups.
  • Bake in the preheated oven for about 18 minutes or until a toothpick inserted in the center of a muffin comes out clean.
