Indulge in velvety pasta with crispy prosciutto, zesty lemon, and savory parmesan - a family favorite that speaks for itself.
Ingredients:
  • 400g fettuccine
  • 4 slices prosciutto, coarsely chopped
  • 1 garlic clove, crushed
  • 300ml light thickened cream
  • 20.00 ml finely grated lemon rind
  • 15.90 gm fresh lemon juice
  • 230g (1 1/2 cups) frozen peas
  • 20g (1/4 cup) finely grated parmesan
  • Fresh basil leaves, to serve
Instructions:
  • Boil the pasta in a generously salted large saucepan until al dente following the package instructions. Drain and return to the pan.
  • Heat 1 teaspoon of oil in a medium frying pan over medium-high heat. Cook the prosciutto until crisp, about 2-3 minutes, stirring occasionally. Transfer to a paper towel-lined plate.
  • Heat the remaining oil in the frying pan, then sauté garlic until aromatic. Pour in the cream, lemon rind, and lemon juice. Simmer until the sauce thickens, then add peas and cook until tender. Season with salt and pepper to taste.
  • Toss the cream mixture and prosciutto with the pasta until evenly combined. Serve in individual dishes and sprinkle with parmesan and basil.
