Indulgent cheesy pasta with smoky prosciutto, frozen spinach, and fragrant basil. Delicious!
Ingredients:
  • 24 uncooked jumbo pasta shells (about 6 oz)
  • 1 jar (26 oz) tomato-basil pasta sauce
  • 3 cups shredded mozzarella cheese (12 oz)
  • 1 cup cottage cheese
  • 1 cup chopped prosciutto (4 1/2 oz)
  • 1 box (9 oz) frozen spinach, thawed, squeezed to drain
  • 2 tablespoons chopped fresh basil leaves, if desired
Instructions:
  • Preheat oven to 375°F. Prepare pasta according to package instructions, then drain. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Spread 1/3 cup of the pasta sauce evenly over the bottom of the dish.
  • Combine 1 cup of mozzarella cheese with cottage cheese, prosciutto, and spinach in a medium bowl. Fill each shell with approximately 2 tablespoons of the mixture. Place the filled shells in a baking dish, then cover them with pasta sauce and top with the remaining 2 cups of mozzarella cheese.
  • Cover the dish with foil and bake for 30 to 40 minutes until fully heated. Finish by sprinkling with fresh basil for a burst of flavor.
