Elevate classic French potato bake with rustic flair and fresh seasonal ingredients.
Ingredients:
  • 1kg chat potatoes
  • 100g capers
  • 120g olive
  • 20.00 ml thyme leaves
  • 4 rosemary sprigs, broken into small pieces
  • 125ml olive oil
  • 40.00 ml white wine vinegar
  • 20.00 ml finely chopped flat-leaf parsley
Instructions:
  • Preheat the oven to 220°C and prepare a baking tray with baking paper.
  • Add the potatoes to a pan and cover them with cold, salted water. Bring to a boil over medium-high heat, then simmer on medium heat for 10-12 minutes until potatoes are just tender. Drain carefully and let them cool slightly.
  • Gently crush the potatoes with a fork and place them in a bowl with capers, olives, thyme, and rosemary. Season to taste. Add 1/3 cup (80ml) oil and toss to coat. Transfer to a baking tray. Whisk vinegar with 2 tablespoons oil and drizzle over the potatoes.
  • Bake for 45 minutes or until beautifully golden and perfectly crisp. Sprinkle with fresh parsley and serve.
