Maple syrup prunes oat loaf: perfect for tea or coffee.
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup quick cooking oats
  • 1 teaspoon ground ginger
  • 0.5 teaspoon grated nutmeg
  • 0.5 teaspoon ground cloves
  • 1 cup plain yogurt
  • 1 cup chopped pitted prunes
  • 0.5 cup white sugar
  • 2 eggs, beaten
  • 1 teaspoon maple syrup
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x5x3-inch loaf pan.
  • Combine flour, oats, baking powder, ground ginger, baking soda, nutmeg, and cloves in a bowl, blending them thoroughly.
  • In a large bowl, combine yogurt, prunes, sugar, and eggs, whisk together. Add the flour mixture and stir until just combined. Gently fold in the maple syrup, then pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for about 40 minutes until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
