Savory pork chops in a white wine bacon sauce. Delicious!
Ingredients:
  • 1 slice bacon
  • 2 tablespoons bacon drippings
  • 4 center-cut pork chops
  • kosher salt
  • 1 pinch ground black pepper
  • 1 cup white wine
  • 1 small yellow onion, sliced
  • 2 cloves garlic, chopped
  • 1 cup water
  • 2 tablespoons cornstarch
Instructions:
  • Cook bacon in a large skillet over medium-high heat until perfectly browned, around 10 minutes. Transfer the bacon to a plate lined with paper towels. Discard excess grease from the skillet, leaving around 2 tablespoons of bacon drippings.
  • Season the pork chops generously with kosher salt and black pepper. Sear them in the reserved bacon drippings until golden brown on both sides, about 3 to 5 minutes per side. Pour in the white wine, lower the heat to medium-low, cover the skillet, and continue cooking for 2 minutes.
  • Dice the bacon and add it to the skillet along with the onion slices and garlic. Cover and simmer until pork chops are no longer pink in the center, about 10 minutes per side. Use an instant-read thermometer to check if the center reaches 145 degrees F (63 degrees C), then transfer the pork chops to a plate lined with paper towels to drain.
  • Combine water and cornstarch in a small bowl, then mix into the sauce in the skillet. Cook and stir until the sauce thickens, then pour over pork chops to serve.
