Air fryer beer-battered fish fillets paired with crispy homemade potato wedges for a delightful take on a traditional pub favorite!
Ingredients:
  • 1 russet potato
  • 0.75 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.75 cup malt beer
  • 4 (3 ounce) fillets cod fillets
Instructions:
  • Prepare crispy potato wedges: Peel the potato and slice it into 12 wedges. Submerge the potato wedges in a medium bowl with 3 cups of water for 15 minutes. Drain and refill with fresh water, soaking for another 15 minutes.
  • Prepare the fish by combining flour, cornstarch, salt, garlic powder, baking soda, and baking powder in a large bowl. Stir in 1/2 cup of malt beer until well combined. If the batter is too thick, gradually add the remaining beer, 1 tablespoon at a time.
  • Lay cod fillets on a baking sheet with a drip rack. Drizzle half of the batter over the fillets. Freeze for 35 minutes to set. Turn the fillets and spread the rest of the batter over them. Freeze for another 35 minutes.
  • Heat up the air fryer to 400 degrees F (200 degrees C) for 8 minutes.
  • Place frozen fish fillets in the preheated air fryer and cook for 15 minutes, remembering to flip them halfway through.
  • After draining water from the potato wedges, gently pat them dry with a paper towel. Transfer the wedges to a medium bowl and coat them evenly with oil, salt, and pepper by tossing them together.
  • Air fry the coated potato wedges for 15 minutes in the preheated air fryer.
