Elegant Brie cheese wrapped in flaky puff pastry, beautifully presented.
Ingredients:
  • 1/2 package (17.3-ounce package) frozen puff pastry (1 sheet), thawed
  • 1 round (14 to 15 ounces) Brie cheese
  • 1 egg
  • 1 tablespoon milk
  • 1 teaspoon chopped fresh rosemary leaves
  • Fresh rosemary sprigs
  • Red currants or cranberries
  • Fresh bay leaves, if desired
Instructions:
  • Preheat your oven to 400°F. Roll out the pastry on a lightly floured surface and use a 3-inch leaf-shaped cookie cutter. Cut out about 24 leaves, dusting the cutter with flour to prevent sticking. Arrange the pastry leaves in a circle around the cheese on an ungreased cookie sheet. Remove the cheese and chill the pastry wreath in the refrigerator for 5 to 10 minutes.
  • Whisk egg and milk until smooth. Brush mixture over pastry wreath, sprinkle with rosemary. Bake until golden brown. Transfer wreath to serving platter.
  • Create a 1/4 inch deep impression in the top of the cheese using a leaf cutter. Remove the cutter and delicately scrape off the rind from the leaf design using a spoon. Transfer the cheese to an ungreased cookie sheet.
  • Bake the cheese for 8 to 10 minutes until soft and partially melted. Then, center the cheese on the pastry wreath and decorate with rosemary sprigs, currants, and bay leaves.
