Make your own perfect flaky puff pastry at home with this easy step-by-step recipe.
Ingredients:
  • 225g (1 1/2 cups) plain flour
  • Pinch of salt
  • 30g lard, chopped
  • 125ml (1/2 cup) iced water
  • 200g butter
Instructions:
  • In a large bowl, combine the flour and salt. Use your fingertips to blend the lard into the flour mixture until it resembles fine breadcrumbs.
  • Pour in the water and mix with a round-bladed knife until dough comes together. Transfer dough onto a lightly floured surface and knead gently until smooth. Cover with plastic wrap and refrigerate for 30 minutes before using.
  • Roll out the dough into a 10 x 30cm rectangle using a lightly floured rolling pin. Prepare an 8 x 9cm rectangle of butter between 2 sheets of plastic wrap, then place it in the center of the rolled out dough. Fold the dough over the butter to enclose it, starting with the end closest to you.
  • Rotate dough 90° clockwise and delicately seal edges. Lightly flour a rolling pin and gently tap to flatten butter. Roll dough into a 10 x 30cm rectangle and repeat folding process. Cover with plastic wrap and chill in the fridge for 30 minutes.
  • Take the dough out of the fridge and repeat the rolling and folding process two more times. Cover it with plastic wrap and let it rest in the fridge for 30 minutes. Repeat the rolling and folding process two more times and chill for another 30 minutes. (The dough should have been folded and rolled a total of six times.)
