Create flaky puff pastry from scratch for a truly satisfying baking experience. Watch as the delicate layers puff up beautifully in the oven.
Ingredients:
  • 5 cups bread flour
  • 2.5 teaspoons salt
  • 2 cups water, or as needed
  • 2 cups unsalted butter, at room temperature
Instructions:
  • Combine flour and salt in a large bowl or stand mixer with dough hook attachment. Slowly add water until dough comes together and cleans the sides of the bowl. Shape into a flat ball and let rest for at least 10 minutes.
  • Sandwich the butter between two sheets of plastic wrap and gently flatten it into a disc using a rolling pin or a heavy object. Chill in the refrigerator until firm, approximately 20 minutes.
  • On a lightly floured surface, roll out the dough into a large 1/2-inch thick rectangle. Place the chilled butter in the center and fold the ends over, encasing the butter. Roll out the dough again to 1/2-inch thickness, being careful not to let the butter break through. Fold into thirds for the first turn. Rotate the dough 90 degrees, roll out into a rectangle, and fold into thirds again. Place the dough on a baking sheet, mark it with two pokes (two turns), cover in plastic wrap, and refrigerate for at least 30 minutes.
  • Perform the rolling, folding, and turning process two more times, totaling 6 turns. Chill the dough until firm, wrap it, and refrigerate. The puff pastry dough is now ready to roll out for any recipe needing puff pastry.
