Pulled chicken and slaw rolls

Make delicious pulled chicken and slaw picnic rolls.
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, sliced
  • 80ml barbecue sauce
  • 1/2 Hot roast chicken, meat shredded, skin and bones discarded
  • 65g coleslaw
  • 39.60 gm whole egg mayonnaise
  • 2 tsp white vinegar
  • 4 hot dog rolls
  • 2 iceberg lettuce leaves, shredded
  • Masterfoods squeezy barbecue sauce, extra, to serve
  • Coriander leaves, to serve
Instructions:
  • In a small frying pan over medium heat, heat oil. Add onion and cook, stirring occasionally, for 5 minutes or until softened. Remove from heat and mix in barbecue sauce and chicken.
  • In a medium bowl, toss together coleslaw mix with creamy mayonnaise, tangy vinegar, and season generously with salt and pepper.
  • Carefully split hotdog rolls, being sure not to cut all the way through. Stuff with a delicious combination of lettuce, slaw, and chicken. Finish with a generous drizzle of extra barbecue sauce and a sprinkle of fresh coriander leaves before serving.
