Soda, condiments, and boneless chicken slow-cooked for delicious sweet and tangy pulled chicken sandwiches. Perfect for a crowd-pleasing family meal!
Ingredients:
  • 2 pounds skinless, boneless chicken breast
  • 1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage (such as Coca-Cola®)
  • 1.5 cups barbeque sauce
  • 0.5 cup raspberry walnut vinaigrette
  • 0.25 cup light brown sugar
  • 3 tablespoons honey
  • 2 tablespoons teriyaki marinade (such as Kikkoman®)
  • 0.5 teaspoon ground cardamom
  • 0.25 cup mayonnaise, or to taste
  • 8 medium hamburger buns, split
Instructions:
  • Place the chicken in a slow cooker and surround it with cola. Set the slow cooker to High and let it cook for 3 hours.
  • Combine barbecue sauce, vinaigrette, brown sugar, honey, teriyaki marinade, and cardamom in a mixing bowl, mixing until thoroughly combined. Chill in the refrigerator.
  • After 3 hours, take out the tender chicken from the slow cooker and pull it apart into shreds. Reserve 1/2 cup of the flavorful cooking juices and dispose of the rest.
  • Add the chicken and 1/2 cup juice back into the slow cooker, stir well. Take the barbecue sauce from the fridge, pour it over the chicken, and mix it in. Let it cook for an additional hour.
  • Coat the hamburger buns with a generous layer of creamy mayonnaise before filling them with tender pulled chicken and savory sauce.
