Pumpkin, broccoli and bacon pasta

Effortlessly prepare this delicious one-pot pasta dish in just 30 minutes, where the pasta effortlessly cooks in the savory sauce!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, halved, sliced
  • 6 shortcut bacon rashers, trimmed, chopped
  • 500g butternut pumpkin, peeled, cut into 2cm cubes
  • 2 garlic cloves, thinly sliced
  • 4 sprigs fresh thyme
  • 255.00 gm chicken style liquid stock
  • 250g spaghetti
  • 1 head broccoli, cut into small florets
  • 63.13 gm thickened cream
  • Toasted pine nuts, to serve
  • Fresh basil leaves, to serve
  • Finely grated parmesan, to serve
Instructions:
  • In a large heavy-based saucepan or flameproof casserole dish, heat oil over medium-high heat. Add onion, bacon, and pumpkin. Cook for 5 minutes until onion is softened. Stir in garlic and thyme.
  • Pour in the flavorful chicken stock along with 2 cups of cold water and cover the pot. Bring it to a boil, then toss in the spaghetti and adjust the heat to medium. Let it simmer for 10 minutes, stirring occasionally. Introduce the broccoli and simmer for an additional 5 minutes, stirring now and then, until both the pasta and broccoli are tender and the sauce has thickened.
  • Take off the heat. Remove and discard the thyme sprigs. Stir in the cream. Season with salt and pepper. Serve the pasta topped with pine nuts, basil leaves, and Parmesan.
