Revamp your dinners with quick and flavorful pumpkin, thyme, and caramelized onion pizzas in just 30 minutes.
Ingredients:
  • 400g butternut pumpkin, thinly sliced
  • 2 Pizza Bases Large
  • 100g pizza cheese
  • 20.00 ml thyme sprigs
  • 160g relish
  • 40.00 ml pine nuts, toasted
  • 100g goat's cheese, crumbled
  • Basil pesto, to serve
  • Baby rocket leaves, to serve
  • Mint leaves, to serve
Instructions:
  • 1. Preheat oven to 220C and line 2 baking trays with baking paper. 2. Heat a large frying pan over medium-high heat. 3. Cook pumpkin in the pan in 2 batches for 2 minutes on each side until golden brown and tender. Transfer to a plate.
  • Place the pizza bases on lined trays, sprinkle with pizza cheese, top with pumpkin, thyme, relish or chutney, pine nuts, and goat’s cheese. Bake for 15 minutes or until golden brown. Finish by topping with pesto and sprinkling with rocket and mint.
