Elevate weeknight dinners with quick pumpkin, thyme, and caramelized onion pizzas in just 30 minutes.
Ingredients:
  • 400g butternut pumpkin, thinly sliced
  • 2 Pizza Bases Large
  • 100g pizza cheese
  • 20.00 ml thyme sprigs
  • 160g relish
  • 40.00 ml pine nuts, toasted
  • Basil pesto, to serve
  • Baby rocket leaves, to serve
  • Mint leaves, to serve
Instructions:
  • 1. Preheat the oven to 220C and line two baking trays with baking paper. 2. Heat a large frying pan over medium-high heat. 3. Cook the pumpkin in the pan in two batches for about 2 minutes per side, until golden brown and tender. Transfer to a plate.
  • Lay out pizza bases on lined trays. Scatter with pizza cheese. Add pumpkin, thyme, relish or chutney, pine nuts, and goat’s cheese. Bake until golden brown, about 15 mins. Finish with dollops of pesto, and garnish with rocket and mint.
