Elevate your grilled meats with a delicious roast pumpkin and rocket salad, topped with Parmesan or feta for extra flavor.
Ingredients:
  • 40.00 ml balsamic vinegar
  • 12.00 gm brown sugar
  • Salt & ground black pepper, to taste
  • 1/2 (about 700g) butternut pumpkin, peeled, deseeded, quartered lengthways, cut into 5mm thick wedges
  • 1 bunch rocket, ends trimmed, washed, dried
Instructions:
  • Preheat the oven to 240°C.
  • Combine oil, vinegar, sugar, salt, and pepper in a large bowl, whisking to blend. Add pumpkin and mix well to ensure it's coated. Transfer the pumpkin mixture to a large shallow baking tray.
  • Roast in a hot oven for 20-25 minutes until the pumpkin is tender and gets golden edges. Take out of the oven and let it cool for 5 minutes.
  • Plate the pumpkin and rocket beautifully, then generously drizzle with the delicious pan juices before serving.
