Rocket and roast pumpkin salad

Enhance your salad with creamy goat's cheese.
Ingredients:
  • 500g butternut pumpkin, peeled and seeded
  • 3 bunches rocket, washed and trimmed
  • 60ml olive oil
  • 20.00 ml white balsamic vinegar
  • 150g goat's cheese
Instructions:
  • Preheat oven to 200°C. Dice the pumpkin into 2 cm pieces. Toss the pumpkin with garlic, oil, salt, and pepper in a roasting dish. Roast for 20 minutes until golden and tender. Let it cool slightly before serving.
  • Add arugula to a large salad bowl. Combine oil and vinegar in a screw top jar by shaking well. Sprinkle crumbled goat cheese over arugula, add pumpkin and dressing, then toss to combine.
