Pumpkin and Spice Bread Pudding

Indulge in comforting bread pudding with fluffy whipped cream.
Ingredients:
  • 3 cups whipping cream
  • 11/2 cups milk
  • 1/2 cup granulated sugar
  • 5 whole eggs
  • 3 egg yolks
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 3/4 cup packed brown sugar
  • 1 teaspoon pumpkin pie spice
  • 14 brioche or challah, cut into 3/4-inch slices, then cut into 3/4-inch cubes (10 cups)
  • 1 cup whipping cream
  • 1 tablespoon granulated sugar
  • 2 tablespoons bourbon
Instructions:
  • 1. Butter the 13x9-inch glass baking dish generously. 2. In a large 3-quart saucepan, bring 3 cups of whipping cream, milk, 1/2 cup of granulated sugar, and salt to a gentle simmer over medium heat, stirring often. 3. Once simmering, take the saucepan off the heat.
  • In a large bowl, whisk together eggs and yolks, then mix in pumpkin, brown sugar, and pumpkin pie spice. Slowly incorporate this mixture into the hot cream mixture. Carefully fold in the bread cubes and allow to rest for 30 minutes.
  • Preheat your oven to 325°F. Sprinkle 2 tablespoons of granulated sugar over the custard. Bake for 50 minutes or until the top is puffed and light golden brown. Allow it to cool for 5 minutes before serving.
  • In a chilled medium bowl, whip 1 cup of heavy cream and 1 tablespoon of granulated sugar with an electric mixer on high speed until stiff peaks form (don't overmix). Gently fold in bourbon. Enjoy with warm bread pudding.
