Pumpkin and Spiced-Cider Pudding Cake

Indulge in a decadent dessert with a blend of apple cider pudding and spiced pumpkin cake.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup canned pumpkin (not pumpkin pie mix)
  • 2 tablespoons vegetable oil
  • 1/4 cup milk
  • 1 1/2 cups refrigerated unfiltered fresh-pressed apple cider
  • 1 tablespoon butter or margarine
  • 1 cup packed brown sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon pumpkin pie spice
Instructions:
  • Preheat the oven to 350°. In a medium bowl, combine flour, granulated sugar, baking powder, 1/2 teaspoon pumpkin pie spice, and salt. Gently mix in pumpkin, oil, and milk until just moistened. Transfer the batter to an ungreased 8x8x2 inch square baking dish.
  • In a 1-quart saucepan, bring apple cider and butter to a boil over medium-high heat.
  • Combine brown sugar, cornstarch, and 1/4 teaspoon of pumpkin pie spice in a small bowl. Sprinkle this mixture over the pumpkin batter in the baking dish, then pour the boiling cider mixture over everything.
  • Bake until the top is a beautiful golden brown and the edges are bubbling, which should take around 40-45 minutes. Allow it to cool for 15 minutes before serving warm.
