Cheesy pumpkin and tuna pasta bake ready in 30 minutes - a quick and delicious dinner option!
Ingredients:
  • 375g Rigatoni pasta
  • 500g Kent pumpkin, seeded, peeled, chopped into 2cm pieces
  • 425g can Tuna Chunks in Springwater, drained, coarsely flaked
  • 300g Sour Cream
  • 120g tasty cheese
Instructions:
  • Boil pasta in a large saucepan for 7 minutes. Then add pumpkin and cook until both are tender, about 5 minutes. Drain thoroughly.
  • Preheat the grill on high. Transfer the pasta mixture back to the pan. Mix in the tuna, sour cream, and 1/2 cup (60g) of cheddar. Combine well. Transfer everything into a 10-cup (2.5L) ovenproof dish.
  • Top with the remaining cheddar and grill for 5-7 minutes until golden brown.
