Tuna melt with green goddess peas

Elevate the classic tuna melt with a cheesy twist and delicious herby peas.
Ingredients:
  • 125.00 ml mixed fresh herbs (such as mint, parsley, basil and coriander)
  • 125.00 ml frozen peas, thawed
  • 18.20 gm extra virgin olive oil
  • 4 slices Abbott’s Village Bakery Harvest Pumpkin & Sunflower Seeds, lightly toasted
  • 2 x 95g cans tuna in springwater, drained, flaked
  • 30g (1/4 cup) grated provolone cheese
  • Snow pea sprouts, to serve (optional)
Instructions:
  • Combine fresh herbs, peas, and a drizzle of oil in a small food processor. Pulse until roughly chopped. Alternatively, finely chop the herbs and peas, then mix in the oil.
  • Preheat the grill to high. Spread the pea mixture evenly on the toast slices. Add tuna and cheese on top. Grill for 3-4 minutes until the cheese is melted. Optional: garnish with sprouts.
