Create a zesty tuna melt with lemon-spiced tuna, gooey mozzarella, and sweet pineapple on a burger bun for a taste of the tropics.
Ingredients:
  • 4 hamburger buns, split
  • 2 tablespoons butter
  • 1 (5 ounce) can tuna chunks in olive oil
  • 1 tablespoon lemon juice
  • salt and freshly ground black pepper to taste
  • 1 dash chili powder
  • 1 cup shredded lettuce
  • 1 cup shredded mozzarella cheese
  • 4 canned pineapple rings
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Toast hamburger buns until golden, then spread the cut sides with butter.
  • Pour off half the oil from the tuna. In a small bowl, mix the tuna with the reserved oil, lemon juice, salt, pepper, and chili powder until well combined. Stuff each toasted bun with the tuna salad, shredded lettuce, mozzarella cheese, and a pineapple ring.
  • Arrange the sandwiches on a baking sheet and bake until the cheese is beautifully melted, for about 10 to 12 minutes.
