Delicious gluten-free pumpkin bread with walnuts made using all-purpose flour and xanthan gum.
Ingredients:
  • 1.75 cups gluten-free all-purpose baking flour (such as Bob's Red Mill®)
  • 0.66666668653488 cup white sugar
  • 2 teaspoons baking powder
  • 1.5 teaspoons xanthan gum
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking soda
  • 1 cup canned pumpkin
  • 2 eggs, beaten
  • 0.33333334326744 cup butter, softened
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • In a large mixing bowl, combine flour, sugar, baking powder, xanthan gum, cinnamon, salt, and baking soda. In a separate bowl, mix together pumpkin, eggs, and butter. Add the pumpkin mixture to the flour mixture and beat until a smooth batter forms. Gently fold in the walnuts.
  • Bake in the preheated oven for about 1 hour until a toothpick inserted into the center comes out clean.
