Pumpkin Cheesecake Fudge Brownies

Indulgent pumpkin cheesecake brownies: layers of creamy pumpkin cheesecake over fudgy brownies, topped with rich ganache and sprinkles. A festive treat for your holiday table!
Ingredients:
  • 1 box (17.8 oz) Betty Crocker™ Delights Supreme Triple Chunk Brownie Mix
  • Water, vegetable oil and egg called for on brownie mix box
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup canned pumpkin (not pumpkin pie mix)
  • 1 egg
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup heavy whipping cream
  • 6 oz semisweet chocolate, chopped
  • Betty Crocker™ Fusion Sprinkles Harvest Mix, as desired
Instructions:
  • Preheat your oven to 350°F. Prepare a 9-inch square pan by lining it with foil and spraying the bottom and sides with cooking spray. Follow the instructions on the brownie mix to make the batter. Spread the batter in the pan evenly. Bake the brownies for 24 to 26 minutes, or until they are set around the sides and a toothpick inserted in the center comes out almost clean. Allow them to cool for 10 minutes before serving.
  • In a medium bowl, combine cream cheese and pumpkin using an electric mixer on low speed until smooth. Mix in the egg, sugar, cinnamon, and nutmeg until fully incorporated. Pour the mixture over the slightly cooled brownies, spreading it evenly.
  • Bake for 25 to 30 minutes until the edges of the pumpkin layer are firm and the center is almost set. Allow it to cool completely for about 1 hour and 30 minutes.
  • Microwave whipping cream in a medium microwave-safe bowl on High for 50 to 70 seconds until hot but not boiling. Stir in chocolate until smooth; allow to cool and thicken slightly for 5 minutes. Enjoy the velvety goodness!
  • Smoothly coat the fully cooled brownies with the rich ganache topping, sprinkle with colorful sprinkles, and allow them to set in the refrigerator, this will take about 2 hours. Lift the brownies out of the pan using foil, cut them into 16 squares, and store them covered in the refrigerator.
