Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup butter or margarine
  • 1 cup quick-cooking oats
  • 1/2 cup finely chopped walnuts
  • 1 package (8 oz) cream cheese, softened
  • 3/4 cup sugar
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 3 eggs
  • 2 cups sour cream
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
Instructions:
  • Preheat oven to 350°F. Grease a 13x9-inch pan with cooking spray. Combine flour and brown sugar in a medium bowl. Use a pastry blender to incorporate butter until mixture resembles coarse crumbs. Add oats and walnuts, then press mixture into the bottom of the pan. Bake for 15 minutes.
  • In a large mixing bowl, use an electric mixer on medium speed to blend filling ingredients until smooth. Pour the mixture over the hot base and bake for 20-25 minutes until the center is set and dry.
  • In a small bowl, combine topping ingredients. Spoon the mixture evenly over the pumpkin layer. Bake for about 5 minutes until the topping is set. Allow to cool completely for about 2 hours. Cut into 4 rows by 4 rows and refrigerate covered.
